Word of the Day: Cure

Do you like cured meats?

Have you ever eaten a pastrami sandwich on rye bread?

How about pepperoni pizza?

Or a ham sandwich?

Did you know that these meats have not been cooked?

Yep, that’s right; deli meats are cured meats.

These meats can be smoked, salted or preserved in brine (a salty liquid).

Initially, before refrigeration, people prepared meats in this way to preserve them for a long time.

Today, we have refrigeration, but traditionally preserved meats taste so good that they are still made.
